Enjoy the last bits of summer! Get your hands on some gorgeous heirlooms and pick up some of the best sea salt around.
5 cups heirloom tomato pieces (3/4 inch thick)
3 cups watermelon (3-4 inch cubes)
1/2 teaspoon Piran Sea Salt
1 small red onion, thinly sliced
1/4 cup Trampetti Extra Virgin Olive Oil
Small handful of arugula leaves
Pinch of fresh or dried herbs (oregano, mint or tarragon)
Crumble feta cheese to top
Whisk together olive oil, vinegar and salt. Toss in onion, tomatoes and allow to sit for 3 minutes, flavors will blend. Add herbs. Just before serving, add watermelon, feta and olives. Serve over arugula!
